Banana Nut Bread Banana Nut Bread
 
Yield: 8-10 servings

Ingredients
1 1/2 C ripe banana's, mashed
2 C self rising flour
1/4 tsp. cinnamon
1/8 tsp. nutmeg
1/4 tsp. salt
2 eggs
1 C Pioneer Sugar
1/3 C butter or margarine, melted
1/2 C walnuts, chopped

Directions
Preheat oven to 350 degrees F.

In a mixing bowl cream the butter and Pioneer Sugar until light and fluffy (3-5 minutes). Add eggs; beat another 2 minutes. Add half of the flour, cinnamon, nutmeg, salt and all the mashed banana's and beat 2 minutes. Add the rest of the flour and beat some more. Stir in the walnuts. Pour into a greased & floured 9-inch bread pan. Bake for 45 minutes or until knife inserted comes out clean. Cool in the pan for 5 minutes. Remove and cool completely on wire rack before slicing.
