  Date Nut Bread

Ingredients
2 pkgs. dates
2 tsp. baking soda
1 1/2 C boiling water
1 3/4 C Pioneer or Big Chief Sugar
2 eggs
2 T butter, softened
3 C flour
1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1 C walnuts, chopped

Directions
On a cutting board, chop up the dates put into a bowl; sprinkle with baking soda then pour boiling water over the top. Let stand until lukewarm.

Meanwhile preheat the oven to 350 degrees F and lightly grease 2 bread pans; set aside. In a large mixing bowl add the Pioneer or Big Chief Sugar, eggs, butter and half the date mixture. Add flour, baking powder and salt. Beat well. Add the rest of the date mixture, vanilla, and nuts. Mix thoroughly.

Spread dough into bread pans filling half full. Bake 1 hour or until knife inserted in the middle comes out clean. Cool on wire rack for 5 minutes. Remove from pans and continue to cool on wire rack.
