Sweet Dumpling Soup

Ingredients
1 sweet dumpling squash; peeled, seeded, cut into 1” cubes
1 lb. ground turkey
1 MED onion, diced
2 stalks celery, diced
2 T chicken soup base
2 T roasted turkey gravy mix (Watkins)
1/2 tsp. minced garlic
1/2 tsp. dried tarragon
1 tsp. parsley, fresh, chopped
1/4 tsp. nutmeg
1 tsp. salt or to taste
1/2 tsp. pepper or to taste
2 T Pioneer Golden Light Brown Sugar
3/4 cup quick barley
Directions
Sauté onion and celery with turkey until browned in a large soup pot. In the same pot add 8 cups water, chicken soup base, gravy mix, garlic, tarragon, parsley, nutmeg, salt, pepper and brown sugar; stir to mix. Bring to a boil and add squash and barley. Let boil for 5 minutes and then simmer for 30 minutes; stirring occasionally. Serve with Cheddar Quick Bread (recipe found under Breads & Muffins).
