1 small box (12 oz.) vanilla wafers
2 pkg. (8 oz. ea.) cream cheese
3/4 C Pioneer Sugar
1 T vanilla
Cherry or Blueberry pie filling
Preheat oven to 350 degrees F. Line a mini-muffin pan with paper or foil liners. In food processor crush vanilla wafers. Place 1 tsp. wafers into miniature paper liners; set aside.
Cream together cream cheese, sugar, eggs and vanilla. Mix until well blended. Fill each paper liner with cream cheese mixture almost to the top. Bake for 15 minutes. Remove and let cool. Top with a dab of filling.
