1 small box (12 oz.) vanilla wafers
2 pkg. (8 oz. ea.) cream cheese
3/4 C Pioneer® Sugar
1 T vanilla
Cherry or Blueberry pie filling
Preheat oven to 350 degrees F. Line a mini-muffin pan with paper or foil liners. In food processor crush vanilla wafers. Place 1 tsp. wafers into miniature paper liners; set aside.
Cream together cream cheese, Pioneer® Sugar, eggs and vanilla. Mix until well blended. Fill each paper liner with cream cheese mixture almost to the top. Bake for 15 minutes. Remove and let cool. Top with a dab of filling. Enjoy!
